Ingredients
  

For the Honey-Lime Vinaigrette
  • 1/4 cup Olive Oil extra virgin
  • 3 tbsp Fresh Lime Juice
  • 1 tbsp Honey
  • 1 tsp Dijon Mustard
  • 1 clove Garlic minced
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper freshly ground
For the Grilled Chicken
  • 1.5 lbs Boneless, Skinless Chicken Breasts about 2-3 breasts, pounded to even 3/4-inch thickness
  • 1 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Cumin ground
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper freshly ground
For the Salad Assembly
  • 8 cups Mixed Greens such as romaine, spring mix, or a combination
  • 1 cup Cherry Tomatoes halved
  • 1 large Cucumber diced
  • 1/4 Red Onion thinly sliced
  • 2 ripe Avocados diced
  • 1/2 cup Corn Kernels fresh, frozen (thawed), or canned (drained and rinsed), optional
  • 1/2 cup Black Beans canned, rinsed and drained, optional

Method
 

Prepare the Honey-Lime Vinaigrette
  1. In a small bowl, whisk together the 1/4 cup olive oil, lime juice, honey, Dijon mustard, minced garlic, 1/4 tsp salt, and 1/8 tsp black pepper until well combined and emulsified. Set aside.
Marinate and Grill the Chicken
  1. Pat the chicken breasts dry with paper towels. In a medium bowl, toss the chicken with 1 tablespoon olive oil, smoked paprika, garlic powder, cumin, 1/2 tsp salt, and 1/4 tsp black pepper, ensuring the chicken is evenly coated.
  2. Preheat your grill or grill pan to medium-high heat (about 400-450°F / 200-230°C). Lightly oil the grill grates.
  3. Place the seasoned chicken breasts on the hot grill. Cook for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C) and the chicken is cooked through with nice grill marks. Cooking time may vary based on thickness.
  4. Remove the chicken from the grill and let it rest on a cutting board for 5 minutes. This helps the juices redistribute, keeping the chicken moist. Then, slice the chicken against the grain into 1/2-inch strips or dice into bite-sized pieces.
Assemble the Salad
  1. In a large mixing bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, thinly sliced red onion, diced avocados, and optional corn and black beans.
  2. Add the sliced grilled chicken to the salad bowl.
  3. Pour about half to two-thirds of the prepared Honey-Lime Vinaigrette over the salad. Toss gently to coat all ingredients evenly. Add more dressing if desired.
  4. Serve immediately and enjoy your vibrant Grilled Chicken Salad!

Notes

For best results, pound chicken breasts to an even thickness (about 3/4 inch) before seasoning to ensure even cooking. If you prefer, you can marinate the chicken for 15-30 minutes after seasoning for deeper flavor, but it's not strictly necessary. Leftover vinaigrette can be stored in an airtight container in the refrigerator for up to 5 days; shake well before using.
