Ingredients
  

  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Fresh Lemon Juice from 1-2 lemons
  • 1 tbsp Fresh Ginger grated
  • 1 tsp Dijon Mustard
  • 1 tsp Maple Syrup or honey, optional, for sweetness
  • 1 clove Garlic minced, optional
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste

Method
 

  1. In a small mixing bowl, combine the freshly squeezed lemon juice, grated fresh ginger, Dijon mustard, minced garlic (if using), maple syrup (if using), salt, and black pepper.
  2. Whisk the ingredients together thoroughly until well combined.
  3. Slowly drizzle in the extra virgin olive oil while continuously whisking. Continue to whisk vigorously until the dressing is emulsified and creamy.
  4. Taste the dressing and adjust seasoning as needed. You might want to add more salt, pepper, a dash more lemon, or a pinch more ginger to suit your preference.
  5. Serve immediately over your favorite green salads, grain bowls, or roasted vegetables. Alternatively, transfer to an airtight container for later use.

Notes

Store the Lemon Ginger Salad Dressing in an airtight jar or container in the refrigerator for up to 5-7 days. If the dressing separates upon standing (which is natural with vinaigrettes), simply shake or whisk vigorously again before serving to re-emulsify.
