Combine Wet Ingredients
- In a small mixing bowl or a jar with a tight-fitting lid, combine the fresh lemon juice, Dijon mustard, honey (if using), minced garlic, fresh parsley, dried oregano, sea salt, and black pepper.
Emulsify the Dressing
- Slowly drizzle in the extra virgin olive oil while continuously whisking vigorously (or shaking if using a jar with a lid). Continue to whisk/shake until the dressing is well combined and emulsified, appearing creamy and slightly thickened.
Taste and Adjust
- Taste the vinaigrette and adjust seasonings as needed. You might want to add more salt, pepper, or a bit more lemon juice for extra tang.
Serve or Store
- Serve immediately over your favorite salad, as a marinade for chicken or fish, or drizzled over roasted vegetables. If not using immediately, transfer to an airtight container and refrigerate.
Notes
This Lemon Herb Vinaigrette can be stored in an airtight container in the refrigerator for up to 5-7 days. If it separates during storage, simply shake or whisk it vigorously again before serving to re-emulsify. For a different flavor profile, experiment with other fresh herbs like chives, dill, or basil.
