Prepare the Carrots
- Wash, peel, and slice the carrots as desired (1/2-inch thick coins or diagonal chunks). For uniform cooking, ensure pieces are similar in size.
Make the Glaze
- In a small bowl, whisk together the melted unsalted butter, fresh orange juice, honey, and orange zest. Season with salt and freshly ground black pepper. Set aside.
Cook the Carrots
- Heat a large skillet over medium-high heat. Add the prepared carrots and 1/4 cup of water. Bring to a simmer, then cover and cook for 5-7 minutes, or until carrots are tender-crisp. (Alternatively, if roasting: Preheat oven to 400°F (200°C). Toss carrots with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until tender-crisp.)
Glaze the Carrots
- Uncover the skillet (or remove from oven if roasting) and increase heat to medium-high. Pour the orange honey glaze over the carrots. Cook, stirring frequently, for 3-5 minutes, or until the glaze has thickened and coats the carrots beautifully.
Serve
- Taste and adjust seasoning if necessary. Transfer the Orange Honey Glazed Carrots to a serving dish. Garnish with fresh chopped parsley, if desired, and serve immediately.
Notes
For a deeper caramelization, you can roast the carrots. Toss the carrots with 1 tbsp olive oil, salt, and pepper, then roast at 400°F (200°C) for 15-20 minutes until tender. Then, transfer to a skillet and proceed with the glazing step. These carrots are best served fresh.
