Prepare the Vinaigrette
- In a small bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and black pepper until emulsified and well combined. Set aside.
Assemble the Salad
- Wash and thoroughly dry the mixed greens. Place them in a large serving bowl.
- Carefully slice the ripe peaches into wedges or bite-sized pieces. Add them to the bowl with the greens.
- Add the fresh blueberries, crumbled feta cheese, and thinly sliced red onion (if using) to the bowl.
- If using, sprinkle the toasted chopped pecans over the salad for added crunch.
Dress and Serve
- Just before serving, drizzle the prepared honey-lime vinaigrette over the salad.
- Gently toss the salad to ensure all ingredients are evenly coated with the dressing.
- Serve immediately as a refreshing side dish or light meal.
Notes
For best results, use ripe but firm peaches. If you prefer, you can lightly grill the peach slices for a smoky flavor before adding them to the salad. This salad is best enjoyed fresh. Store any leftover dressing separately in an airtight container in the refrigerator for up to 5 days.
