  • 8 oz cream cheese full-fat, softened to room temperature
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest freshly zested
  • 1/8 tsp salt
  • 1 cup fresh berries finely diced, such as strawberries, blueberries, or raspberries
For the Roll-Ups
  • 10 spring roll wrappers standard size (about 8-inch square)
  • 2 tbsp unsalted butter melted
  • 1 tbsp powdered sugar for dusting (optional)

Method
 

Make the Cheesecake Filling
  1. In a medium mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, lemon zest, and salt. Beat with an electric mixer on medium speed (or whisk vigorously by hand) until the mixture is completely smooth and creamy, with no lumps.
  2. Gently fold the finely diced fresh berries into the cheesecake mixture using a spatula. Be careful not to overmix, as this can crush the berries and make the filling watery.
Assemble the Roll-Ups
  1. Lay a spring roll wrapper on a clean, dry surface with one corner pointing towards you (like a diamond). Keep any unused wrappers covered with a damp cloth to prevent them from drying out. Spoon about 2 tablespoons of the cheesecake-berry filling onto the lower third of the wrapper.
  2. Fold the bottom corner of the wrapper tightly over the filling. Then, fold in the left and right side corners towards the center. Roll the wrapper tightly from the bottom up to create a neat, compact roll. Repeat with the remaining wrappers and filling.
Cook the Roll-Ups
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Brush each assembled roll-up lightly with melted butter on all sides. Place the roll-ups seam-side down on the prepared baking sheet, ensuring they are not touching. Bake for 15-20 minutes, or until they are golden brown and crispy.
  2. Allow the baked roll-ups to cool for a few minutes on the baking sheet before transferring to a serving plate. For an extra touch, dust lightly with powdered sugar before serving. Enjoy warm!

Notes

Make-Ahead Tip: You can assemble these cheesecake fruit roll-ups up to 24 hours in advance. Store them unbaked in a single layer on a parchment-lined baking sheet, covered loosely with plastic wrap, in the refrigerator. Brush with butter and bake just before serving.
Fruit Variations: Feel free to get creative with your fruit! Diced peaches, thinly sliced apples with a pinch of cinnamon, or even bananas work wonderfully in place of or in addition to berries.
Crispiness Factor: For the crispiest roll-ups, make sure not to overcrowd your baking sheet or air fryer. Give them enough space so the hot air can circulate evenly around each roll-up.
