Mango Habanero Honey Garlic Sauce

Ingredients
  

For the Sauce Base
  • 1 tbsp Olive Oil or neutral cooking oil
  • 2 large Ripe Mangoes peeled, pitted, and diced (about 2 cups)
  • 1-2 Habanero Peppers deseeded and minced (adjust to heat preference; wear gloves!)
  • 4-6 cloves Garlic minced
  • 1 tsp Fresh Ginger grated
  • 1/2 cup Honey
  • 1/4 cup Apple Cider Vinegar
  • 1/4 cup Water or mango juice for more intense mango flavor
  • 2 tbsp Brown Sugar packed
  • 1 tbsp Soy Sauce low sodium preferred
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste
For Thickening
  • 1 tbsp Cornstarch
  • 2 tbsp Cold Water (for slurry)

Method
 

Prepare the Base
  1. Heat olive oil in a medium saucepan over medium heat. Add the minced habanero pepper, garlic, and grated ginger. Sauté for 2-3 minutes until fragrant, being careful not to burn the garlic.
  2. Add the diced mango, honey, apple cider vinegar, 1/4 cup water, brown sugar, and soy sauce to the saucepan. Stir well to combine all ingredients.
  3. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and cook for 15-20 minutes, stirring occasionally, until the mango pieces are very soft and easily mashable.
Blend and Thicken
  1. Carefully transfer the hot mango mixture to a blender or food processor. Blend until the sauce is completely smooth. Be cautious when blending hot liquids; use a vented lid or cover loosely with a kitchen towel.
  2. For an exceptionally smooth sauce, press the blended mixture through a fine-mesh sieve back into the saucepan, using a spatula to push through as much pulp as possible. Discard any remaining solids.
  3. In a small bowl, whisk together the cornstarch and 2 tablespoons of cold water until a smooth slurry forms.
  4. Return the pureed sauce to the saucepan over medium-low heat. Bring it to a gentle simmer. Whisk in the cornstarch slurry and cook for another 2-3 minutes, stirring constantly, until the sauce thickens to your desired consistency.
Finish and Store
  1. Taste the sauce and adjust seasoning as needed. Add more salt or pepper, a touch more honey for sweetness, or a splash more vinegar for tang.
  2. Remove from heat and let the Mango Habanero Honey Garlic Sauce cool completely before transferring it to an airtight container. The sauce will thicken further as it cools.

Notes

For less heat, ensure all seeds and membranes are removed from the habanero peppers. For a spicier kick, use two habaneros and/or include a few seeds. This sauce is excellent on grilled chicken, pork, shrimp, or as a dipping sauce for spring rolls. Store the sauce in the refrigerator for up to 2 weeks.
