Ingredients
  

For the Sauce
  • 1/4 cup Coconut Aminos or Tamari Use Tamari for a gluten-free soy sauce option.
  • 1 tbsp Toasted Sesame Oil
  • 1 tsp Rice Vinegar Unseasoned
  • 1 tsp Sriracha or Chili Garlic Sauce Adjust to your preferred spice level.
For the Egg Roll Bowl
  • 1 tbsp Avocado Oil
  • 1 lb Ground Pork Ground chicken, turkey, or beef can also be used.
  • 3 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated
  • 1 bag (14 oz) Coleslaw Mix A mix of shredded cabbage and carrots.
  • 3 Green Onions sliced, with white and green parts separated
  • 1 tbsp Sesame Seeds For garnish

Method
 

Prepare the Sauce
  1. In a small bowl, whisk together the coconut aminos (or tamari), toasted sesame oil, rice vinegar, and sriracha. Set aside.
Cook the Pork and Aromatics
  1. Heat the avocado oil in a large skillet or wok over medium-high heat. Once hot, add the ground pork. Cook, breaking it apart with a spoon, for 5-7 minutes until it's browned and cooked through.
  2. Drain any excess grease from the skillet, leaving about a tablespoon for flavor.
  3. Add the minced garlic, grated ginger, and the sliced white parts of the green onions to the skillet with the pork. Sauté for 1-2 minutes until fragrant.
Combine and Finish
  1. Add the entire bag of coleslaw mix to the skillet. Stir-fry for 5-6 minutes, tossing frequently, until the cabbage has softened to your liking but still has a slight crunch.
  2. Pour the prepared sauce over the mixture in the skillet. Stir everything together until well combined and allow it to simmer for 1-2 minutes, letting the sauce thicken slightly and coat all the ingredients.
  3. Remove the skillet from the heat. Divide the egg roll in a bowl mixture into four serving bowls. Garnish with the sliced green parts of the green onions and a sprinkle of sesame seeds before serving.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. The cabbage will soften upon reheating but will remain delicious.
Protein Swap: Feel free to substitute the ground pork with ground chicken, turkey, or beef.
Serving Suggestion: For an extra layer of flavor and creaminess, drizzle with a keto-friendly spicy mayo (mayonnaise mixed with a bit of sriracha and a squeeze of lime juice).
