Cook the Jammy Egg
- Bring a small saucepan of water to a rolling boil. Carefully lower the egg into the boiling water using a spoon. Reduce heat slightly to maintain a gentle boil and cook for exactly 6.5-7 minutes for a perfect jammy yolk. Immediately transfer the cooked egg to an ice bath or run under cold water for at least 1 minute to stop the cooking process. Once cooled, gently peel the egg.
Toast the Bread
- While the egg is cooking, toast your slice of bread in a toaster or toaster oven until golden brown and crispy to your preference.
Prepare the Avocado
- While the egg cools and bread toasts, cut the avocado in half, remove the pit, and scoop out the flesh of half an avocado into a small bowl. Add the fresh lime juice, sea salt, black pepper, and red pepper flakes (if using). Mash with a fork to your desired consistency – chunky or smooth.
Assemble the Toast
- Spread the mashed avocado evenly over the toasted bread.
Top with Egg & Garnish
- Slice the peeled jammy egg in half lengthwise and carefully place it on top of the avocado toast. Sprinkle with everything bagel seasoning (if using) and finely chopped fresh chives or cilantro. Finish with a small drizzle of extra virgin olive oil, if desired. Serve immediately.
Notes
For the perfect jammy egg, ensure your water is boiling before adding the egg and cool it immediately in an ice bath to stop cooking. A ripe avocado should yield slightly to gentle pressure. Feel free to adjust seasonings to your taste. This recipe is easily scalable for more servings.
