Ingredients
  

Marinade
  • 0.25 cup soy sauce low sodium preferred
  • 2 tbsp Worcestershire sauce
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice freshly squeezed
  • 4 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp brown sugar packed
  • 1 tsp freshly cracked black pepper
  • 1 tsp dried rosemary crushed between fingers
  • 0.5 tsp crushed red pepper flakes optional, for heat

Method
 

Make the Marinade
  1. In a small bowl, whisk together soy sauce, Worcestershire, olive oil, lemon juice, garlic, Dijon mustard, brown sugar, black pepper, rosemary, and red pepper flakes until the sugar dissolves and the mixture emulsifies slightly.
Marinate the steak
  1. Place 1.5 to 2 pounds of steak (flank, skirt, sirloin, or ribeye) in a gallon zip-top bag or shallow dish. Pour marinade over the steak, seal or cover, and massage to coat evenly.
  2. Refrigerate for at least 2 hours, ideally 4 to 8 hours. Flip the bag or turn the steak halfway through if possible. Do not exceed 12 hours or the acid will break down the meat too much.
Cook the steak
  1. Remove steak from marinade 30 minutes before cooking. Pat completely dry with paper towels - this is essential for a good sear. Discard used marinade.
  2. Grill over high heat or sear in a screaming hot cast-iron skillet for 3 to 4 minutes per side for medium-rare, depending on thickness. Rest 5 to 10 minutes before slicing against the grain.

Notes

For maximum tenderness on tougher cuts like flank or skirt, score the surface lightly with a sharp knife before marinating so the flavors penetrate deeper. This marinade also works beautifully on chicken thighs or pork chops - just reduce marinating time to 2 to 4 hours. Make a double batch and freeze half; it keeps frozen for 3 months and thaws quickly for weeknight dinners.
