Vibrant Watermelon Mint Smoothie

Ingredients
  

  • 3 cups Frozen Watermelon cubed
  • 1/2 cup Unsweetened Coconut Water
  • 1 tbsp Fresh Lime Juice
  • 1 tbsp Honey or Agave Nectar optional, to taste
  • 5-6 leaves Fresh Mint Leaves for blending and garnish

Method
 

  1. If not already frozen, cut fresh watermelon into 1-inch cubes (aim for about 4 cups fresh to yield 3 cups frozen). Spread the cubes in a single layer on a baking sheet lined with parchment paper and freeze for at least 4 hours, or preferably overnight, until solid.
  2. Add the 3 cups of frozen watermelon cubes, 1/2 cup of unsweetened coconut water, 1 tablespoon of fresh lime juice, and 2-3 fresh mint leaves to a high-speed blender. If using, add 1 tablespoon of honey or agave nectar.
  3. Secure the lid and blend on high speed until the mixture is completely smooth and creamy. If the smoothie is too thick, add a splash more coconut water (1-2 tablespoons at a time) until the desired consistency is reached, scraping down the sides with a spatula if necessary to ensure even blending.
  4. Pour the vibrant watermelon smoothie into two glasses. Garnish each serving with a few fresh mint leaves, if desired.
  5. Serve immediately and enjoy this hydrating and delicious treat.

Notes

For a creamier smoothie, you can add 1/4 cup of plain Greek yogurt or a small frozen banana. For an extra tropical twist, add a few pineapple chunks. For best results, ensure your watermelon is very ripe and sweet.
